Mini Peanut Butter Cupcakes

On Friday, to celebrate the end of yet another week, I decided to spend some quality time with the KitchenAid. There was a conversation about cupcakes going on over on Twitter and for some reason, I was craving peanut butter. So I decided to combine the two! Can I tell you that these may just be my new favorite cupcake? While I do enjoy peanut butter, I wasn't sure how a whole cupcake would taste, so I decided to make little mini ones. Big enough to satisfy my sweet tooth, but little enough to not make me feel incredibly guilty for indulging. This was a smart decision in the long run because they are incredibly decadent.

Peanut Butter Cupcakes
1/2 c. butter
1 1/2 c. brown sugar
1/2 c. peanut butter
1 tsp. vanilla
2 eggs, beaten
1 1/2 c. flour
1/2 tsp. salt
2 tsp. baking powder
2/3 c. milk

Cream butter, sugar and peanut butter. Add the vanilla and eggs, beating well. Sift together the flour, salt and baking powder. Alternately, add this to the egg mixture with the milk. Bake in greased or lined muffin pans at 350 degrees for about 30 minutes. Cool on a wire rack, frost. I used a plain buttercream frosting, but a chocolate frosting would have been delicious. If I had thought about it, I probably would have thrown in some chocolate chips too. (Because really, chocolate chips make everything better right?) Makes 20 cupcakes or 48 mini cupcakes, just adjust the baking time, I left mine in about 12 minutes.

To say that Sandy LOVES peanut butter is an understatement. She can smell it from anywhere in the house and usually comes running full throttle into the kitchen when she does. Friday night was no exception. She sat eagerly by the oven while the cupcakes were baking.

And the end result (I ran out of buttercream frosting, but had a can of fun-fetti icing in the pantry.) The overall consensus? They're a keeper. Everyone from my grandpap to my younger cousins to my best bud and her husband enjoyed them the next day.

Next baking project -- Chocolate mint cupcakes (they are supposed to taste like Thin Mint Girl Scout Cookies.

LOVE Sandy's picture!!!! Awesome. The Peanut Butter Cupcakes sound great. I will have to try them. Although sad to say, I STILL don't have a KitchenAid!!!

I've read your blog a couple times but never commented but I just have to because omg, those look amazing! How did you pipe the icing? It looks super fancy and it would so impress my coworkers :)
