Can I Brag for a Second?

I know its not cool to brag, but I am going to for a few minutes. Ok? Good. Please don't hate me for it (or for posting twice in one day, I promise to keep it short).

Earlier I said I was going to bake some apple butter pumpkin pies. I was scared. I've only made a few other pies and these ones are going to be consumed by my extended family. My extended family who can cook and bake with the best of them. You name it and chances are someone in my family has perfected it. As you may or may not now, this time last year my main mode of cooking was microwaving. I had no idea what a broiler did (and apparently a lot of other people out there don't since several dozen people per day find by blog by googling those words), didn't know the satisfaction of preparing a home cooked meal, and was not brave enough to attempt something like making homemade bread.

For the past several years on the major holidays when we all descend upon my grandparents, my mom and her sisters join my grandma in the kitchen to finish the final preparations of a fantastic meal. When I ask what I can do to help, I am usually banished from the kitchen (I was once given the task to make sure the gravy didn't burn and FAILED miserably) to "keep the younger ones occupied until dinner time." Well dear readers, my time has come, I have arrived! I totally ROCKED the apple butter pumpkin pies. Then because I still had some pumpkin left over, a quick search of allrecipes.com turned up this recipe for pumpkin cookies. I substituted chocolate chips for raisins (because in my world, a little bit of chocolate makes everything better) and threw in the rest of the of pecan pieces I had left over from the pies. Can I just tell you these are delicious!!





I know there are some of you sitting at home reading this thinking "Really Mandy, they are just simple desserts." And you're right, they are. But lets all rejoice in the fact that I made something, two somethings that are completely edible and will be shared with others in my family. And lets hope this year, I am allowed in the kitchen before its time to eat and not just sent to entertain the little kids, although I am still secretly hoping to still get to sit at the kiddie table--its just more fun! Here's hoping I make RebeccaC proud (you all know she's my cooking mentor/guru right? I really do consider her my own personal Martha and she always answers my crazy questions, which I really do appreciate.)!!

They look so yummy, Congratulations! I was the same way with cooking, I once ruined mac & cheese out of the box! Who does that?

I'm a whole lot better now though, mostly because I finally let my mom give me a few lessons. :)

Those may be simple desserts, but they're simple desserts pulled off extremely well! That's huge!

And I have to say, the simple sweets are my favourites most of the time. I'll take chocolate chip cookies over pretty much anything else in life, every time.

Oh my goodness Mandy! You really outdid yourself. I may have to try that pie recipe soon. It sounds fantastic!! I'm very, very proud of you! Happy belated Thanksgiving wishes too!
