Jumbo Pumpkin Pecan Muffins


This weekend was full of fun fall activities from an Oktoberfest celebration to local pumpkin and apple festivals. Here at our house we pulled out some of the fall and Halloween decorations. With no plans for today, I was in the mood to bake. My Taste of Home Magazine came in the mail the other day filled will all sorts of Fall and Thanksgiving treats. In the spirit of autumn I decided to make some pumpkin muffins! My mom made an apple cake and tonight I enjoyed a little sliver of both with some Sam Adams Oktoberfest brew. Sorry the picture isn't the greatest, I seem to do better with sunsets than I do with food.

Jumbo Pumpkin Pecan Muffins
(Taste of Home Magazine)

2 1/2 cups all-purpose flour
1/2 cup sugar
1/4 cup packed brown sugar
2 teaspoons pumpkin spice (or 1 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup canned pumpkin
1/2 cup buttermilk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup chopped pecans

Topping:
1/3 packed brown sugar
1/3 cup finely chopped pecans
1/4 cup all-purpose flour
1/4 cup cold butter

In a large bowl, combine the first seven ingredients. In another bowl, whisk the eggs, pumpkin, buttermilk, oil, and vanilla. Stir into dry ingredients just until moistened. Fold in pecans. Fill six greased or paper-lined jumbo muffin cups three-fourths full.

In a small bowl, combine the brown sugar, pecans and flour, cut in butter until crumbly. Sprinkle over batter.

Bake at 375 degrees for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
