Wow My Stove Really Does Work!

For a long time, I thought the only reason my family had a stove is because we were supposed to. You know, because everyone else does. Like a refrigerator or a toliet. A stove is just one of those things every house is supposed to have. Whether or not its used is another thing. Yes, occassionally the stove top would be used to make macaroni and cheese or heat up soup, but a microwave was much more efficient for me. For the most part, the only reason I used the stove was to set groceries on top of it or store pans and bowls in it. Turns out you can do all sorts of cool things in a stove....my favorite feature I only recently learned how to use...the broiler! The broiler is very exciting for me. Did you know you can a broil a steak in just minutes? So cool! My microwave usage has taken a nosedive in recent months.

Reading RebeccaC's blog changed that. Since then I have attempted homemade bread, pasta dishes, dishes the involve foods I didn't know were available in my grocery store, and just about everything that she has posted on her blog. Honestly, if you haven't gone to visit her little corner of the internet go do it, and while you are there tell her congratulations--she won an extra week off from work and an extra bonus so she will be spending her honeymooon in Italy! Plus she has lots of great ideas for gift baskets and hostess gifts. Shes like Martha Stewart and Julia Child all wrapped up in one, minus having a jail record and being a spy.

A few weeks ago she issued a cupcake challenge. Since she is my favorite cooking blogger, I knew I had to respond! Finding the time was another thing. Given my recent obession with the Olympics, working, and trying to catch some sleep here and there I was running out of time for her challenge. So I really only had one option. I ditched work! It was the best and really only option. I mean the Olympics are over tomorrow, I needed sleep really bad, the cupcakes needed made before weekend festivities and I have the rest of my life to work. Ditching work worked out really well--I got to sleep in, watch the US mens basketball team, and was able to make the cupcakes (and dinner) before the evening Olympic coverage started.

What kind of cupcakes did I make? Pina Colada Cupcakes! I got the recipe from the blog Good Things Catered and it combines my love for sweets and alochol-- life does not get much better! They were super easy to make and look really cute too. I even added straws! Perfect for a little mini Happy Hour right? I didnt just stop at the microwave, I completely channeled my inner domestic goddess to conjure up some pineapple glazed ham and hashbrown casserole for dinner. And I did it all using the stove and it didn't come from a box, which in my world, doesn't happen very often. Cheers!

Can you send us some cupcakes? 8 will do for all of us. They look so good!!!! I am glad you took off a day from work and have your priorities straight!!! Do you feel rested?

Please tell me that the cupcakes are actually hollowed out and inside is a real drink. I'm VERY impressed and Martha Stewart is like, well, I look up to her like I look up to my mom! Yeah, she's that big in my life! I must say that you are getting very close to acheiving Martha-like recognition! And I'm so proud of you for taking the day off work!

Cameo -- Thanks for the kind words. No they weren't hollowed out, but they did have a splash of rum in them, a very big splash.

RebeccaC -- Thank you! I enjoyed making them! And again, the adding of the straws was an idea from the good things blog, but they are fun. :-)
